You Win: Best Lightened-Up Recipes (pp. 28–32)
Healthy Cooking is known for taking reader-favorite recipes and lightening them up in the Test Kitchen Makeover section. This issue, the editors turned the table and asked readers to submit their best lightened-up recipes for the March 2009 contest. Traditional lasagna can have nearly 500 calories and 30 grams of fat per serving! Heather O’Neill’s lightened-up Grand Prize recipe for Lasagna Deliziosa saves 177 calories and 18 grams of fat per serving from the classic version. Heather lightened up the recipe by using turkey sausage and reduced-fat ricotta cheese. Full-fat peanut-butter pie may have over 650 calories and a whopping 40 grams of fat per serving. Lisa Varner’s lightened version of Peanut Butter Pie is slimmed down to just 305 calories and 8 grams of fat per serving. The changes that Sandie Heindel made to her Spinach & Crab Dip saved 28 calories and 8 grams of fat per serving.
Heart Smarts: American Heart Month (p. 12)
The facts are astounding: one of every three women in the U.S. will die from heart disease. There is no better time to get Heart Smart than during American Heart Month. Smart eating and exercise are two ways to work toward a healthy heart. Eating lots of fruits and vegetables, the right fats and whole grains are just a few ways to make your diet heart-friendly.
